Carbonara with chicken and peas recipe

Photo: Carbonara with chicken and peas recipe

Takes: 15mins to prepare and 30mins to cook
Serves: 4

Ingredients

2 boneless, skinless, chicken breasts, about 250g total weight
2 bay leaves
300g spaghetti
125g frozen peas
1tbsp olive oil
3 shallots, finely chopped
3 garlic cloves, finely chopped
1 medium courgette, coarsely grated, patted dry on kitchen towel
2 large eggs, beaten
50g Parmesan, grated
1tbsp flat-leaf parsley, chopped

Lay the chicken breasts in a frying pan with the bay leaves and cover with water. Bring to a gentle simmer, then simmer for 20 minutes until cooked. Remove and chop the chicken into small cubes. Cook the spaghetti in a saucepan of boiling water according to packet instructions, adding the peas for the last 3 minutes of cooking time. While the spaghetti cooks, heat the oil in a large frying pan, then add the shallots and fry for 3-4 minutes until they are starting to brown. Stir in the garlic and fry for 1 minutes, then tip in the courgette and stir-fry for 2-3 minutes. Stir the chicken into the pan, season with salt and pepper. Keep warm.

Drain the spaghetti in a colander over a bowl, so you can reserve a little of the pasta water, then drop the spaghetti and peas into the pan with the chicken. Mix the eggs and cheese together with some salt and pepper, remove the pan from the heat and pour in the egg mixture. Stir everything together to coat well, spooning in enough of the pasta water to give a sauce. Toss in most of the parsley, then serve immediately sprinkled with the rest of the parsley.

2 tbsp olive oil
1 fennel bulb, roughly chopped
1 onion, roughly chopped
1 large carrot, roughly chopped

Heat the oil in a large saucepan and cook the fennel, onion and carrot for 8-10 mins until softened. Stir in the garlic, crushed chillies, fennel seeds and tomato purée, cook for 2 mins, then add the canned tomatoes, stock and sugar. Simmer, uncovered, for 15 mins or until the vegetables are completely soft.

Take out a couple of spoonfuls of the sauce (this will later add texture), then blend the rest in the saucepan until almost smooth with a stick blender. Simmer for 5 mins to thicken, then stir in the reserved sauce, shredded basil and peppers. Serve with the pasta.

Silvana's Mediterranean & basil pasta recipe

Photo: Silvana's Mediterranean & basil pasta recipe

Silvana Franco's fast, easy and healthy vegetarian pasta is perfect for a midweek meal

Prep: 5 mins Cook: 30 mins
Skill level Easy
Serves 4

Ingredients

2 red peppers, seeded and cut into chunks
2 red onions, cut into wedges
2 mild red chillies, seeded and diced
3 garlic cloves, coarsley chopped
1 tsp golden caster sugar
2 tbsp olive oil, plus extra to serve
1kg small ripe tomatoes, quartered
350g dried pasta
a handful of fresh basil leaves and 2 tbsp grated parmesan (or vegetarian alternative), to serve

Method

To roast the veg, preheat the oven to 200C/gas 6/fan 180C. Scatter the peppers, red onions, chillies and garlic in a large roasting tin. Sprinkle with sugar, drizzle over the oil and season well with salt and pepper. Roast for 15 minutes, toss in the tomatoes and roast for another 15 minutes until everything is starting to soften and look golden.

While the vegetables are roasting, cook the pasta in a large pan of salted boiling water according to packet instructions, until tender but still with a bit of bite. Drain well.

Remove the vegetables from the oven, tip in the pasta and toss lightly together. Tear the basil leaves on top and sprinkle with Parmesan to serve. If you have any leftovers it makes a great cold pasta salad – just moisten with extra olive oil if needed.

Guacamole “Pasta” Recipe

Photograph by Stephanie Foley

Serves 8 (as a small plate)

Active time:30 min
Start to finish:45 min

Want to cook like a mad-scientist chef at home? Here’s your chance. Agar flakes, available at most natural foods stores, are the secret ingredient to this bizarro take on guacamole. The technique food editor Ian Knauer used to craft the “noodles” is straight out of MacGyver’s handbook, utilizing ordinary drinking straws to elevate regular old chips and dip to a mind-blowing hors d’oeuvre. (Editors’ note: This recipe is solely the creation of Ian Knauer and has not been formally tested by the Test Kitchen.)

For avocado noodles
3/4 cup plus 2 Tbsp reduced-sodium chicken broth
2 tablespoons agar flakes (preferably Eden brand)
1/2 ripe 6- to 8-oz avocado, pitted and peeled
1/4 teaspoon grated lime zest
2 teaspoons fresh lime juice

For salsa
1 cup cherry tomatoes
2 tablespoons finely chopped white onion
1 teaspoon minced fresh jalapeño (including seeds)
2 teaspoons fresh lime juice
1 teaspoon tequila
2 tablespoons extra-virgin olive oil

garnish: 8 cilantro leaves
equipment: a squeeze bottle; 32 non-bendable drinking straws

Make noodles:
Bring broth and agar flakes to a boil in a small heavy saucepan, whisking, then boil until most of agar is dissolved, about 3 minutes. Strain though a fine-mesh sieve into a food processor. Add avocado half, zest, lime juice, and 1/4 tsp salt and purée until smooth. Transfer purée while still warm to squeeze bottle and squeeze into straws. Chill until cold, about 10 minutes.

Make salsa while noodles chill:
Cut tomatoes into 1/8-inch-thick slices and toss with onion, jalapeño, lime juice, tequila, oil, and salt and pepper to taste.

To serve:
Wash and dry squeeze bottle. Force each avocado noodle out of straw by squeezing air from bottle into straw. Arrange 3 or 4 noodles on each of 8 hors d’oeuvre plates or in serving spoons, then top with some of salsa.
